BERRY YOGURT BREAKFAST PARFAIT

Berry Yogurt Breakfast Parfait ~ Quick, Healthy Breakfast for Mornings When You Are on the Go! Layers of Greek Yogurt, Granola, Strawberries, Blueberries, Raspberries and coconut!

Does anyone else get in a breakfast rut? It’s the same bowl of cereal. The same piece of toast and egg. The same thing, day after day, it seems. That’s why I love mixing it up with these delicious Parfaits for breakfast or for sahoor for us muslims at this time of the year! They are full of Greek Yogurt and keep me full almost all day. I love the crunch that the granola adds! Plus, put them in a mason jar or a double walled glass and they are both cute and delicious. Everything tastes better in a Mason jar, right?

Just before Ramadan, I had a stunning summer berry granola parfait at a very popular breakfast joint here in Dubai. The yogurt had the consistency of a very thick cream cheese spread. What was even more peculiar was the color it had. A very deep and majestic berry red which you can't find in a store bought yoghurt. SO, I decided to create my version from what I understood. I bought a pack of frozen berries, I took about 1/2 a cup from it and with a hand blender smashed it to a paste. I then added that to the Greek yogurt and voila, produced a thick beautiful red berry sauce.  

Ingredients

  • 1 container of berry Greek yogurt ( I used Rachel's organic )
  •  sliced strawberries (optional, I didn't use this time)
  •  blueberries
  • . raspberries
  • 1 cup granola ( I used Lizi's gluten free, available in all supermarkets)
  • sweetened coconut flakes 
  • 1/2 cup frozen berries (store bought pack)

Instructions

1. Place the yogurt in a bowl. In a separate bowl, blend the frozen berries to a paste like consistency. Add to the yoghurt and mix.

2. Assemble the parfait in the glass jar,  layering the granola at the bottom, then the berry yogurt and last garnish with fresh berries, coconut and a sprinkle of the granola again. 

3. Chill for few hours and enjoy.
