SALTED CHOCLATE BROWNIE COOKIES

So here is the plan for today. Chocolate, chocolate and more chocolate. In the form of these absolutely irresistible Salted Chocolate Brownie Cookies.

BEFore I begin with any explanation, let me just tell you that this CAN be made in a less gluten version!!

I've given a few cookie recipes so far, but this is for the serious chocolate lovers out there. It is packed full of high quality dark chocolate.its super rich!!

Now for the lower gluten version you can use rye four, as it has much less gluten than wheat or all purpose flour. So if you’re following a wheat free diet or are trying to lower your gluten intake, then this is the way to go, I mean choose the rye flour option.

THE PERFECT BROWNIE CONSISTENCY , CHEWY AND SOFT IN THE MIDDLE.

WHENEVER I AM HAVING A SWEET TOOTH CRAVING, I NEED CHOCOLATE!! NOTHING ELSE WILL DO. This definitely was great help ;) These salted chocolate brownie cookies taste just like a brownie, but are a cookie shaped and have crispy edges. The inside of the cookie stays soft and chewy and delicate for days, Like light pillows of chocolate. I’m a huge salty + sweet girl, so had to add some flaky sea salt on top of the cookies. The combo is my absolute favorite. Nothing compliments sweetness like a touch of salt.

INGREDIENTS :

120g flour (or rye flour for less gluten)

1 tsp baking powder

1/4tsp salt

395g dark chocolate (70% cocoa solids)

50g unsalted butter, chopped

4 large free range eggs

270g light soft brown sugar

Sea Salt for sprinkling

INSTRUCTIONS:

1. Take the flour in a bowl and add the salt and baking powder…..and whisk that together. keep aside.

2. Next you need to melt the chocolate with butter. For this you need a saucepan with a little bit of water and a heat proof bowl. Add the chocolate in the bowl over the sauce pan. YES 395 gms of it….BOY THAT’S A LOT!! Make sure its a minimum 70% COCOA (solids) and that its really good quality. Because I mean it really makes a huge difference. Now add the butter and over low heat let it all melt together till its completely liquid and well combined. The keep it aside and let it cool.

3. Next whick together the eggs and sugar on medium speed till the have tripled in volume, which will take about 5-6 minutes. You will know its done when it goes really really pale and the volume had increased loads.

4. Now its time to put the chocolate into this mixture. On a low speed whisk this all together.

5. Now when all of it is well combined it time to add in the dry ingredients and mix well.

6. As you will n notice by now it will be a very sloppy batter, hence the Brownie texture. Pour this in a glass bowl and put in the refrigerator for 30-60 minutes to firm up a little o you can scoop it.

7. Once its firmed up its time to scoop.

8. Now using the palm of your hand flatten these down and sprinkle them with salt.

9. Bake in a pre-heated oven at 180* for 10-12 minutes till they have puffed up and are still a little bit soft inside.

10. Once baked and out of the oven, let it cool and enjoy.
