THIS RECIPE WAS BECOMING QUIET CONTROVERSIAL IN MY RECENT INSTA STORY QUIZ!!! AND YES I AGREE FROM THE PIC OF THE INGREDIENTS I HAD POSTED IT DID LOOK LIKE I WAS GOING TO MAKE A SWEET AND SPICY CHILLI SAUCE/CHUTNEY, BUT COME ON, WOULD I REALLY MAKE IT SO EASY FOR YOU GUYS 😎

Although I call this chilli jam, I don't mean by this that it's the sort of thing you'd spread on your toast at breakfast but rather like I said a chilli jelly - chelly? - that glows a fiery, flecked red and is fabulous with cold meats or a cheese plate. And just a small pot of it makes a gorgeous present
Having a jar of this in your fridge is brilliant. My favourite way to eat it would be with a burger. The sugar is sweet enough, with nicely balance of the heat from the chillies.
Ingredients:
65gms fresh red Chillies
1 medium onion
2 cloves garlic
125ml water
400g white sugar
1 lime, juiced
80ml vinegar
Method:
Peel the onion, halve and roughly chop it.
Cut the chillies in half, and roughly chop them too.
Peel and cut the garlic in half.
Put them all in a food processor until finely chopped.
Now add them in a saucepan with water, lime, vinegar and sugar. Bring to a boil slowly to dissolve the sugar. Then, gently simmer for 30 minutes until the liquid is thick and syrupy. Pour into a jar and allow to cool. Store in the fridge.
