Mystery Box ft. Chicken

 

I have always enjoyed watching master chef, as I am sure most aspiring chefs do.It’s kind of benchmark I think we set to achieve at any point in our lives ...the thrill of competing and progressing by winning each round, to know what you’ve created had been approved by top world class chefs!! Now that’s an exhilarating moment. One of the most exciting things for me was the mystery box round, where you would get a mixture of different ingredients and all the contestants create their masterpieces.

So this week, I decided to do the same and step up the game!! Thanks to @kibsons, I ordered my box of fresh and quality ingredients, ranging from chicken medallions to baby spinach to the sweet potato noodles!! It was quite a thrilling and animated moment... From the moment I opened the box pretending to be on a episode of MASTER CHEF, to creating this dish and then serving to the panel of judges, my family and let me tell you, the critics were very considerate and gentle. Chef @ibra6921 commented, and I quote: “Mischef, très bien”

TONIGHT, I lived a small portion of my dream!! Sharing the recipe, of course.
 

INGREDIENTS

  • 6 chicken breast / medallions
  • 2 cloves garlic
  • 2 cup of baby spinach
  • 1/2 cup Sun-dried tomatoes
  • 1 cup sliced mushrooms
  • Slices of Edam cheese (Edam is originally a Dutch cheese which melts well, making them good for toppings)
  • Most "young" Edam cheese sold in stores has a very mild flavour, and almost no smell when compared to other cheeses. It has a creamy and buttery texture)
  • Balsamic vinegar
  • Olive oil
  • Sweet potato noodles, deep fried

INSTRUCTIONS

  • Butterfly the chicken breast and rub with salt and pepper. Sauté the sliced mushrooms in a pan with a little oil and crushed garlic.
  • Add the sun dried tomatoes, 3-4 spinach leaves, sautéed mushrooms and cheese slice in the chicken pockets. 
  • Heat the oil in another non stick frying pan and sear the chicken breast on both sides, making sure the filling doesn’t fall out.
  • Reduce the flame and cook 5-7 minutes on each side, until done
  • In another bowl take some extra spinach and pour some balsamic vinegar and some virgin olive oil, and coat.
