Mini Nutella-Stuffed Pancakes

Mini pancakes filled with Nutella! These are called Ebelskivers and are originally from Denmark. Perfect for brunch and totally versatile - add whatever filling that you like from chocolate or jam to cheese!

These are also awfully easy to make. Every bite is a melt in your mouth mini pancake and an explosion of chocolate. These mini pancakes really pack in the chocolate, and you will have a mouthful of it when you pop these in.

How do you make chocolate stuffed mini pancake bites?

You basically need a  paniyaram pan or ebleskiver pan to make these which is easily available on amazon. The trick is to fill each well in the pan halfway with pancake batter, add a dollop of your favorite chocolate spread and then add more pancake on top. I like to use a batter dispenser to make this easier. You would have seen me using it on my instagarm stories and I also have it saved on highlights under the tips section, as to where to by the dispenser from. I squeeze out the pancake batter, then a dollop of chocolate spread and then some more pancake batter. And that’s it. Each pancake cooks for 2 minutes and once it rises a bit and the edges are brown, you flip it to cook the other side, using 2 wooden skewers. No leaking, no chocolate spread oozing out – the quick cooking batter ensures that you get perfectly round chocolate stuffed mini pancake bites every single time!

The best way to enjoy these is to dust them with powdered sugar, but you can always dip these in maple syrup or honey or more chocolate sauce. Because there is nothing like too much chocolate.

Definitely going to be wiped out so make extras!

Ingredients
1 cup all-purpose flour
1 ½ tsp sugar
½ tsp baking powder
¼ tsp salt
2 eggs, yolks and whites separated
1 cup milk
2 tbsp unsalted butter, melted and room temperature
cooking spray
nutella

Directions
1. Combine the flour, sugar, baking powder and salt in a bowl. In a separate bowl, whisk the egg yolks, then add the milk and butter. Add the flour mixture and whisk until well combined, but still lumpy.
2. In a separate bowl, beat the egg whites with an electric mixer until stiff peaks form. Add 1/3 of the egg whites to the batter and gently fold to combine. Add the remaining egg whites and gently fold until just combined.
3. Spray an ebelskiver pan with cooking spray and place on a stove set to medium heat. Once the pan is warm, spoon about 2 tbsp of batter into each well. Dollop about 1 tsp of Nutella into the center of each well – placing the Nutella in a piping bag makes this MUCH easier! Spoon enough batter on top to seal the pancakes closed.
4. Once the surface begins to bubble, flip over the pancakes using two skewers, so that the cooked side is facing up. Cook until the bottom turns golden brown.
5. Transfer the pancakes to a plate and enjoy!
