COLLEGE CHAAT
I was badly craving my college chaat. So I tried to make a copy of it; obviously it was not the same but I got very close to it.
Chaat is a term describing savory snacks, typically served at road-side tracks from stalls or food carts in India, Pakistan, Nepal and Bangladesh. With its origins in Uttar Pradesh, chaat has become immensely popular in the rest of South Asia.With a perfect blend of sour and sweet it's an explosion of flavour.
I don't think anyone really wants to know the history of chaat so I'll just shut up and give the recipe. 🙃
Boil one kg chickpeas(chanay) with 2 tbsp salt, 1 tsp haldi and pinch of soda till tender. Alternatively, you can also use the tin version for convenience.
Boil 3 potatoes and dice them.
Slice some onions, wash and place in a bowl. Add some chopped coriander and put them in the fridge for 20 mins.
NOW FOR THE BEST PART; GATAR PAAANIIIIIIII ( tamarind water)
Boil one liter water with half cup imli(tamarind) pulp, 2 tbsp red chili powder, 1 tbsp chaat masala, 1 tbsp sonth (ginger) powder, 1 tsp zeera powder, 1 tsp kala namak (himalayan salt) and table salt to taste. Boil for 3-5 minutes and place in fridge till cold. It's best when served chilled, so I would suggest to prepare in advance.
Now layer the chana(chickpeas), potatoes, onions, corriander and A LOT OF GATAR PANI!! Garnish with slims(spicy potato chips) and enjoy...
You can also sprinkle some chill flakes if you like it more spicy, which I clearly do as you can tell from my pictures.
