Churro Pancakes

Oh boy, you are in for a real treat today, because we are making breakfast decadent with these Churro Pancakes with a Chocolate Sauce.  Do I have your attention? Let me apologise in advance for doing this to you πŸ’πŸ»πŸ˜‹.

My recipe for churros had become quiet a hit. You guys love Churros. Don’t deny it, I can tell. I have cool stats on my blog that tell me so. So I thought of using that same idea with a classic breakfast food–pancakes. Although churros are deep fried and these churro pancakes are not, I decided to take the cinnamon sugar concept and make a deliciously irresistible churro pancakes recipe.

Anyway, when you become a first hand witness to the melting chocolate flowing of a pancake coated in Cinnamon Sugar that tastes just like a Churro? Let me know. It’s like a feeling never felt before. A sensual one.

These are pretty simple to make. Only on a whole other plane of epicness. Because its Churro!!

Crispy at the edges and coated with cinnamon-sugar, these pancakes highlight the best qualities of Mexican churros, complete with a warm chocolate sauce. These pancakes are are beyond fluffy and best eaten while hot.

INGREDIENTS

1 1/2 cup all-purpose flour

1 tbsp  baking powder

2 tbsp  light brown sugar

1 tsp salt

1 tsp. ground cinnamon

3/4 cup whole milk

1/2 cup sour cream

2 large eggs

1 tsp. pure vanilla extract

1 tbsp. butter or as needed

3/4 cup sugar mixed with 3 tbsp of cinnamon

1/2 cup  melted chocolate

DIRECTIONS

  1. In a large bowl, whisk together flour, baking powder, brown sugar, salt, and cinnamon. 

  2. In a separate bowl, whisk together milk and sour cream, then add eggs one at a time. Stir in vanilla. 

  3. Add wet ingredients to dry ingredients and stir with a wooden spoon until just combined. 

  4. Melt butter in a large nonstick skillet over medium heat. When the butter is foamy, reduce heat to medium-low and ladle pancake batter into skillet. Cook until bubbles start to form in batter and the pancake is golden underneath, about 3 minutes. Flip and cook the other side until golden, another 3 minutes. Immediately toss pancakes in cinnamon-sugar

  5. Repeat with remaining batter. Serve immediately with melted chocolate.
