Blueberry & Dark Chocolate Breakfast Parfait
Packed with antioxidants, this healthy breakfast is the guilt-free way to enjoy chocolate in the morning.
Eating breakfast that looks like a tempting dessert is a pretty awesome way to start the day. You could go with pancakes covered in maple syrup, streusel covered sky-high muffins or rich and buttery pastries. All delicious, but probably best saved for a weekend treat.
Ideally they should be made and eaten the same day( to retain the freshness) but it can be made a night before too.
This really is super easy to make, plus it’s super pretty. And pretty food tastes better, doesn’t it?!?! Blueberries are my favorite fruit and love them in just about everything, so adding a couple big handfuls to my yogurt parfaits in the morning just make me super duper happy!
INGREDIENTS
1 cup Frozen or fresh Blueberries
4 tablespoons Chia Seeds
1 cup vanilla Almond Milk
2 tablespoons Cocoa powder
1 tablespoon honey
1/2 a Banana
1 container of yogurt
Shaved Dark Chocolate
Almond slices
INSTRUCTIONS
To start, add 1/4 cup of blueberries to the bottom of each jar. In a medium bowl combine chia seeds, almond milk, cocoa and the honey. Set aside for 15 minutes.
In a blender or food processor, blend 1/4 cup of blueberries, banana and yogurt together. Place the chia layer in the jars and then top with the smoothie mixture.
Finish off with some shaved dark chocolate, blue berries and some almond slices.
