Zucchini Noodles with Avocado Sauce

 

These delicious and healthy zucchini noodles (or zoodles) with avocado sauce are ready in 10 minutes. Besides, this recipe requires just 7 ingredients to make.

Diets don’t work for me so I try to eat healthy as much as I can. I THINK I could live without a lot of things but not carbs or desserts.

This is a raw vegan recipe so there’s no animal products or cooked food here. Thank you @kibsons for the freshest ingredients.
 

INGREDIENTS

  • A box of zucchini noodles (I use Del Monte @delmontearabia. You can totally do it at home also if you have a veggie spiralizer.)
  • 1/2 cup chickpeas
  • 1/2 cup cherry tomatoes
  • Dressing: 
  • 1 avocado
  • Olive oil
  • Lemon juice
  • Salt
  • 2 tbsp sour cream

INSTRUCTIONS

  • Blend all until smooth.
  • Combine zucchini noodles with tomatoes, chickpeas and avocado sauce and serve.
