TOMATO BURRATA CAPRESE SALAD

This Burrata Caprese salad recipe is for those days when you have the finest heirloom and grape tomatoes just calling you out on your normal supermarket run, but can’t decide between fresh mozzarella and ricotta cheese to pile them over. The struggle is real! HA HA

So you naturally reach for the finest soft cheese on the planet, right? And you make a tomato burrata salad, served over fresh basil, olive oil and balsamic dressing reduction; like a boss!
Because truth is: burrata wins over mozzarella you guys, it’s just the way it is! Everything about this Salad screams FRESH! 

If your taste buds haven’t met the likes of Burrata cheese, then allow me to introduce you to mozzarella’s creamier, tastier counterpart. Burrata cheese is essentially mozzarella cheese that’s been filled with cream. (I’ll give you a moment to take that in…) AGAIN, it is a creamy centered ball of cheese, very similar in appearance to fresh mozzarella, packed in water, but with a soft, creamy ricotta like interior. The result is the creamiest, softest cheese with a mild flavor that makes it the perfect match for the sweet tomatoes and basil.

It’s available at most upscale markets,  and locally I find it at Spinneys and waitrose. This Heirloom Tomato and Burrata Salad is one of my all-time favorite summer salads and is great for entertaining.

 

Ingredients

  • 500 gms heirloom and grape tomatoes,different colors
  • 500 gms burrata cheese ( I got from spinneys)
  • few young basil leaves for garnish
  • freshly grounded pepper 
  • 3 tbsp Olive oil
  • 3 tbsp balsamic dressing 

Instructions

  1. Place the burrata cheese on the platter , carefully tearing the pouch with your hands.

  2. Slice the tomatoes into wedges and halves. Place them around the burrata cheese.

  3. Drizzle the burrata salad with olive oil and balsamic dressing. Sprinkle with fresh basil leaves and finish with a pinch of freshly rounded pepper .

  4. Serve with garlic bruschetta.
