SUMMER CORN, AVOCADO & BUTTER BEAN SALAD

This salad couldn't be easier to throw together. Halving all the cherry tomatoes isn't the quickest thing ever, but you can do that plate trick with them. You know, where you place a plate on top of a bunch of them and run a knife through? Have you done that? I have not. It seems like a lot of work. I'm pretty sure I would slice my hand off if I tried the plate trick. I cannot be trusted.

We are blessed to benefit from yet another holy month in our lifetime. Ramadan is here and we all are spiritually charged and excited to receive unlimited bounties. It is the time of the year when we try to please Allah and are rewarded with the limitless mercies of the Al-Mighty.

It is that time of year again, when Muslims from around the world celebrate  and fast from sunrise to sunset daily for a month. Ramadan is a time for spiritual reflection as well as a time for communities and families to come together. While it is a very special month for those celebrating, it can be confusing to know exactly what to eat to provide you with enough energy to get you through your fasts.

Although I understand for most of us, no fast can be completed with our fried pakoras(god forbid), it is at the same time essential to try and include in our diet healthy choices. With limited hours in which to eat it is more essential than ever that your diet supports you with a healthy balance of food types.

Thus for Iftar I made this gorgeous salad, with my side of pakoras of course ;)

It's great all on it's on or even in a pita! Fresh and vibrant with creamy avocado, sweet corn, tart cherry tomatoes, butter beans, and cilantro all in a tangy dressing, it's an excellent dish to bring to an Iftar table! Ingredients 

  • Veggies:
  • 1 small tin sweet corn
  • 10-12 cherry tomatoes, halved
  • 1 can of butter beans, rinsed and drained
  • 1 avocado, diced
  • 1 mango diced 
  • 1 box of mixed greens (salad leaves)
  • 2 tbsp of goat cheese 
  • 1/4 cup dried cranberries
  • Dressing:
  • 1/4 cup olive oil
  • 1 tsp honey
  • 1 tbsp balsamic vinegar
  • 1 tsp Dijon mustard
  • 1 tsp salt

Instructions

  1. Whisk together all ingredients for the dressing and set aside.
  2. Combine all ingredients for the salad in a large bowl; stir in the dressing.
  3. Serve immediately  and enjoy.
