SMOKED SALMON SUSHI STACKS

Sushi is always a good option for eating out; AND not fun to make at home, because to be honest its quiet a bit of work. So I thought to myself, why not try to make something thats just easier but filled with the same great taste. VIOLA….SUSHI STACKS!!

This is a really simple change up on sushi where all of the flavours of a sushi roll are served in a stack, and in this case a spicy salmon sushi with avocado.

I have tried to make this as SIMPLE AS POSSIBLE FOR YOU GUYS, so everyone can enjoy the experience of having homemade sushi.

Typically when making sushi, the recipe starts off with sushi rice which is a short grained rice, which when cooked gets sticky, and it’s seasoned with a touch of vinegar, sugar and salt after cooking. What I have used here is normal jasmine rice or in other words, Thai sticky rice which is more accessible.

Then place a seaweed sheet on top. This is also easily available at all leading supermarkets in the ethnic aisle. The next layer is a cool and creamy avocado layer with diced avocado seasoned with lime juice and salt. The final layer is the spicy smoked salmon mixed up with mayo and Sriracha sauce. The trick to stacking these nicely is to use a cookie cutter where you place the rice layer in and pat it down before placing the next layer in. You can buy circular cookie cutter like cylinders in any baking supply shop like tavola or even online from amazon.

I made these with smoked salmon but feel free to replace it with tuna, cooked shrimp, crab stick etc. I also used a standard cookie size cutter. You can also use mini ones to make appetizer versions for your soiree….hmmm I think am going to try that!!

INGREDIENTS:

2 CUPS COOKED STICKY (JASMINE) RICE

1 AVOCADO DICED, SEASONED WITH SALT AND LIME JUICE

3-4 SEAWEED SHEETS

100 GMS SMOKED SALMON, MIXED WITH { 1 TBSP MAYO,1 TBSP SIRACCHA}

1 TSP PAPRIKA

SESAME SEEDS FOR GARNISH

METHOD:

Place the rice into the cookie cutter or any ring shaped object you are using to create the stack. Pat down lightly, making sure it sticks together. Next place the seaweed sheet , then avocado, followed by the smoked salmon mixure. Sprinkle the paprika on top and garnish with sesame seeds. ENJOYYYY.

Option: Change the salmon with your favourite sushi meat like raw tuna, cooked shrimp, etc.

Option: Add a layer of diced mango!

Tip: Use an empty can of soup with both ends removed to stack the layers.

Tip: Use a greased 1 cup measuring cup to stack the layers in and then flip it onto the plate.
