Schezwan Sauce

You can use it for stir fry or as a dipping sauce for spring rolls and wontons. A great condiment to have in your fridge.
 

INGREDIENTS

  • 200 gms dry red chili

  • Oil 1 cup

  • Minced garlic 1/2 cup

  • Soya sauce 1 1/2 tbsp

  • Vinegar 1/4 cup

  • Sugar 1/4 cup

  • Salt to taste

INSTRUCTIONS

  • Soak the chilies in hot water to hydrate them for an hour

  • Then blend them to make a paste. if it’s too thick you can add the chili water that you soaked it in to loosen it up

  • You can leave some chili bits to big sizes in blending as it gives a nice texture

  • Then heat the oil in a pan and sauté the garlic

  • Add the chili paste and cook on low heat...add the vinegar after 15 minuets and then let it cook for an hour, stirring it occasionally

  • Keep checking it doesn’t stick and you can always add more oil of you think it’s absorbed

  • Add the soya sauce, sugar and salt after 45 minuets and cook for another 15-20 mins

  • Let it cool and store in air tight container and refrigerate

  • Enjoy xx
