Steamed Salmon and Green Bean Salad with a simple balsamic Dressing

This salmon salad is a simple and delicious way to acquire the nutrients found in fish. Serve with fresh green beans for a perfect light meal.

Salmon is remarkably healthful. It is full of protein, vitamin A, and omega fatty acids, which are essential to the proper functioning of the heart and brain.

It is hard for me to believe that we are almost to the end of 2018!!

I always like to step back when we hit this time of year and take stock of how my year has gone. There is something about the start of winter that really motivates me.

I don’t really set any huge “New Year’s resolutions” , but I do have some pretty specific goals I would like to accomplish in the coming year. The biggest and the one I’ve made a lot of progress with the last couple of weeks is cleaning up my diet, or maybe the better thing to say would be, tried to make a lifestyle change.

I got really off track in the start of this year, and it continued into the summer with holidays and ramadan. It happens to all of us. I think that it is important that wherever you are in your journey, you accept it and don’t beat yourself up.

I had stopped working out for a while. And had some weight to lose.As a food blogger,i made a commitment to do better.I’ve been cooking like crazy, and you know what? I’m enjoying food more than I have in a very long time!

Today, let’s talk salad! This streamed salmon and green bean salad is one that will not leave you feeling deprived.It does require a little prep work, but it is easy I PROMISE!

Also something very important I feel is making your dressings means you control the ingredients, and it allows you to tailor them to your taste and make sure only the good stuff is in there.

INGREDIENTS:

100 gms MIXED GREENS

50 gms GREEN BEANS

1/2 cup CHERRY TOMATOES cut in quarters

200 gms SALMON FILLET

FRESH PEPPER

FOR THE DRESSING:

1/4 cup Olive oil

3 tbsp Balsamic vinegar

Salt and Pepper to taste

INSTURCTIONS:

Place the mixed greens in a bowl and keep aside.

Mix the dressing ingredients in a jar and shake well. Now add it to the greens and toss.

HOW TO STEAM THE SALMON:

Fill a pot with water to a depth of 2 inch. Bring to a boil over medium-high heat. Place salmon in a bamboo steamer or you can even use a steel colander. Cover and place steamer in skillet. Cook until just cooked through, 10 to 12 minutes. Test the fish for doneness by poking the thickest party with a fork; the fish should flake. If not, steam 1 to 2 minutes or until the fish just flakes.

Now do the same process with the green beans; Put trimmed and cleaned green beans in the steamer basket, set it over the boiling water, cover, and steam until tender to the bite, 3 to 5 minutes (depending, again, on how crisp or tender you like your green beans).

Assemble the salad now….take your serving bowl and place the mixed greens tossed with the dressing. Add the flaked salmon on top (Grip a standard dinner fork in each hand. Hold the steamed salmon fillet down on the plate with one fork and pull the other fork against the flesh to remove small pieces of flakes).

Now place the cherry tomatoes and green beans and lastly garnish with freshly ground pepper.

*Side note: If you want to lose weight, the next time the waiter asks if you want fresh ground pepper on your salad, say yes! Piperine, the compound that gives black pepper its kick, may prevent fat cells from forming. Researchers say, one day, that compound could be used as a supplement to treat obesity.😍
