Mortality is no one’s favorite topic, so let’s just call this exercise what it is: the ultimate Mischef’s bucket list of must-try recipes. They’re going to be delicious, iconic, and most of all, memorable. So make sure you try them before you punch out of life, or more realistically, until you get tired of everyone arguing about politics all the live long day.

So here’s the deal guys…I am going to start a series where I feel (and yes its my personal opinion) some of the recipes I share will go on my bucket list of mind blowingnessss; yes I just made that word up 😋. I would highly recommend for you to try it at least once before you die 🙃.

Do you love street food? Honestly, who doesn’t!!! Spicy, sweet and fried…that’s what dreams are made of.

I have a real treat for you - a special palak chaat recipe that is easy and delicious.

This palak ki chaat recipe is made with very lightly battered spinach drizzled with spiced yogurt and a tangy tamarind chutney to satisfy your craving for the best street food. Sprinkle on some chaat masala and red chilli powder for extra zing in this recipe.

This luscious street food is definitely a crowd-pleaser, and also it makes a great brunch/snack for evening tea. This chaat also makes a great appetizer for parties and get-togethers.

The nutrients, goodness and health benefits of lush green spinach leaves are conventional, there is nothing new I could tell you about this. We all are aware how momentous it is for us to have a balanced meal, and thus we try to include all things fresh and healthy in our daily diet.

But when it comes to a cheat day, we don’t care much about the above criteria. Isn’t it? How about if someone mentions to you that there’s a way you can include your greens in your cheat day snack? If I were you, I would be pretty thrilled to know that plan. And why not? What could be better than incorporating these leafy greens in your cheat day snacks? This way, cheat days could be a little healthified too. 😉

Jokes aside, this is a extraordinary dish, even for those who don’t eat palak/spinach, or in other words, people who hate the word ‘spinach’, especially the kids.

INGREDIENTS

Yogurt Mixture:

175 grams yogurt, (about a scant ¾ cup)

1⁄2 teaspoon roasted cumin powder

1⁄4 teaspoon salt, or to taste

1 teaspoon sugar, powdered

Batter:

5 tablespoons besan (gram flour)

1 teaspoon salt, or to taste

1⁄2 teaspoon red chilli powder

vegetable oil, to fry

200 grams spinach leaves, torn into pieces ( I used baby spinach leaves)

6 tablespoons tamarind chutney

chaat masala, to sprinkle

red chilli powder, to sprinkle

COOKING METHOD

Make yogurt mixture: tip yogurt into a bowl; add cumin powder, salt, and sugar. Whisk well till smooth and set aside.

Prepare batter: place besan (gram flour) in a bowl; add salt, red chili powder, and 1 cup water. Mix well to make smooth batter. Note that you want a thin batter that will just lightly coat the spinach.

Place a heavy kadhai or wok on medium heat; pour in oil. Once oil is hot but not smoking, take a hand full of spinach and dip it into the prepared batter. Move spinach around in the batter to coat well. Carefully place the lightly coated spinach in hot oil. Fry for 2 minutes or till golden brown, crisp, and crunchy. Remove, drain, and place on kitchen paper to soak up excess oil. Repeat for remaining spinach, doing this in batches without crowding the pan.

To assemble palak ki chaat: spread out crispy fried spinach on a serving platter. Drizzle with yogurt mixture and tamarind chutney. Finish by sprinkling chaat masala and red chili powder to taste. Serve immediately.
