bite size TACOS with guacamole

These little tacos were my favorite part of our ifatr today. Not only were they absurdly delicious (I ate four), they were also beyond adorable. We went with chicken ,crumbled greek feta, guacamole  and some hot homemade salsa, but you could try any variety - from turkey, prawn to vegetarian. The real showstopper is the tiny baked taco shell, the fixins are just the happy on top.

 Ok, enough chatter, let’s take a look at these adorable mini tacos (who knew a taco could be so cute)!I am literally beside myself with excitement, being able to share with you this delicious recipe.

Do you make a mess of yourself when you eat tacos? I know I do! So these one-bite tacos are especially perfect for me.

Making the mini taco shells is kinda fun. You don’t need any fancy moulds, just your muffin tin! Cut rounds out of tortillas (use an empty can if you don’t have cutters – they are the perfect size!), spray with oil and bake for 10 minutes then voila! Mini taco shells!

INGREDIENTS

8 flour tortillas

Coconut or Olive Oil Spray

1/2 kg chicken breast cut into small dices

1/2 teaspoon cumin powder

1 teaspoon chili powder

1/4 teaspoon garlic powder

1 teaspoon salt

1/4 teaspoon pepper

1/2 lemon juice 

1/4 cup crumbled feta

Salsa ( mine was home made, recipe is on my Instagram feed. I always have a jar made and kept in fridge)

Guacamole ( home made again, recipe will follow in the next post)

INSTRUCTIONS

You need a muffin tin  to make the taco shell.

Marinate the chicken with all the above spices and lemon juice.

Preheat your oven to 400. Using a 2" cookie cutter, cut out your taco shells from your flour tortillas. You should get 3 shells per tortilla. Always a good idea to make more in case you end up with a few broken shells.

Flip the  muffin tin upside down. Place the tortilla pieces (folded in half) between the muffin spaces so they will bake in a “taco” shape! in between muffin cups.

 Spray  your taco shells with olive oil or coconut oil. Bake 10 minutes,  watching closely so they don't burn. Before removing, gently check to make sure they have crisped up. Let cool in pan.

Meanwhile, grill your chicken on a griddle pan on high flame for few minutes. As its diced into small pieces it won't take long to cook.

In separate bowls, make your guacamole and your salsa.

To assemble tacos, start with chicken. Top with salsa, then guacamole and lastly crumbled feta.

Serve immediately and ENJOY!!
