DATE CARAMEL

Today’s post is going to be short and SWEET.

A quick and easy recipe of a date caramel made from medjool dates. Perfect as a dip or topping for healthy treats.Vegan and Gluten-free.

Oooh and adding a tsp into my morning coffee when I feel like a little sweetener goes perfectly.

STEP 1

To make this date caramel you’ll need some fresh medjool dates. If you don’t have or can’t find fresh, plump, juicy dates you can always soak your shriveled up dry dates in warm water for an hour or two until they plump up. And by dry dates I don’t mean dehydrated or dried dates. I mean less than fresh.

STEP 2

Now that those gorgeous, sticky, sweet dates are ready to roll, grab some non-dairy milk.I used unsweetened almond milk, but you can use whatever you like. You can even use water, but I find that a non-dairy milk makes it a little creamier and more like caramel.

STEP 3

Take out your food processor or a high powered blender, like a Blendtec or a Vitamix.

You’re not going to have much luck if you don’t have a high powered blender or a food processor. Those dates will not turn into a smooth and creamy texture without a lot of heavy blending.

Now add all the ingredients and start blitzing!!

If you want a thinner sauce to drizzle over ice cream, oatmeal, or anything else you can think of, then keep adding liquid until you get the consistency you’re looking for.

Store it in an airtight container in the refrigerator and it will keep for a week. Drizzle it over ice cream, put it in your morning smoothie, add it to your oatmeal, or spread it on toast. Let your imagination soar.

INGREDIENTS

3 tbsp unsweetened almond milk

1 1/2 tbsp 100% peanut butter*

18 medjool dates (roughly 1 1/2 cups) pitted and chopped into quarters

1 tsp vanilla extract

1/8 tsp salt (or to taste)

INSTRUCTIONS

Add all the ingredients into a high speed blender or food processor (starting with the wet ingredients first if you’re using a blender, as this makes it a lot easier to mix). Blend until smooth, stopping and scraping down the sides when needed. It’s ready to use!
