Chicken Stuffed Potato Bombs
Nothing says fiesta like chicken-stuffed potato bombs. Crispy, cheesy and perfect for dunking into zesty salsa.
Mashed potatoes are one of those dishes that everybody likes. So doesn’t that mean there should be TONS of ways to adapt them into fun and tasty treats?! I think so, and so here I am sharing with you these little bites that are fried to perfection. Even better? They have a gooey cheese center that takes them from delicious to WOW.

Chicken Cheese Balls are a tasty treat for the taste buds. These small little beauties are a popular snack in my house. This recipe would be a perfect iftaar snack or even an after school snack for the kids. My kids love how the cheese oozes out of the chicken balls. It is really fun every single time. You can use any kind of cheese that you wish. I generally like to either add mozzarella cheese or the Mexican cheese mix .
INGREDIENTS
4 medium potatoes, peeled and roughly chopped
Water to boil potatoes
1 teaspoon chili pepper
Salt and pepper
1 chicken breast boiled and shredded
Mexican cheese mix (as much as you like)
3 eggs
2 cups breadcrumbs
Vegetable oil for frying
Salsa (optional) any dipping sauce works.
INSTRUCTIONS
Bring water to a boil, add the potatoes. Boil until potatoes are tender. Drain, mash and then season with salt, pepper and 1 teaspoon of chili pepper. Set aside to cool. Now add the shredded chicken.
Grab a handful of the mashed potatoes and form a patty. Add cheese in the middle and form the patty into a ball. Repeat with remaining potatoes.
Dip the potato balls into egg and breadcrumbs. Repeat.
Fry in vegetable oil until golden brown and crispy. Enjoy with salsa!
