CHICKEN MINCE AND GREEN ONION FRITTERS

Meet the chicken nugget’s fancy cousin! These tasty things are literally one of the easiest things you can ever make and taste so fantastic. Crisp one the outside, soft and juicy on the inside, will instantly make you a fan. Oh, how scrumptious they are!

Ok to be honest, they might seem a little bland for the desi pallet….BUT, theres always a but 😍….with the combination of the roasted tomatoes, avocado and the hint of tart, its delicious.

When you are craving takeaway chicken... try these instead! These chicken fritters are insanely easy to make and they are super tasty. Just make sure you have some friends there to share them otherwise you might end up eating the whole batch by yourself.. You can serve them with just about any main dish, use them as a main dish, or just enjoy them as an appetizer with your favorite dipping sauce.

Leftovers (if that’s possible) should be…

… refrigerated and are perfect the next day for lunch boxes or small picnic sandwiches. You may also make larger patties for some tasty sandwiches. Enjoy them warm or cold.

INGREDIENTS:

250g grape tomatoes

1tsp balsamic vinegar

1 1/2 tbsp olive oil

100g self raising flour

1/2 cup milk

500g minced chicken

4 green onion, thinly sliced, plus extra to serve

1 large avocado

lemon wedges to serve

METHOD:

PREHEAT OVEN TO 200*C

Place tomatoes an oven tray, drizzle with vinegar and 1 tsp of oil. Season with salt and pepper. Roast for 15-20 mins or until tomatoes just soften.

SIFT flour into a large bowl. Gradually add the milk in batches, stirring after each addition..Add the mince Chicken and green onions and stir to combine. Season with slat and pepper. It will look like a thick pancake batter.

ADD oil in a large non stick frying pander medium heat. Spoon a ladleful of the batter into the pan (if you pan is large you can make a few fritters at the same time, side by side) and cook for 2-3 minutes on each side, or until golden brown and cooked through.

MIX together the roasted tomatoes and avocado in a glass bowl. Stir gently and add some olive oil, salt and 1 tsp of apple cider vinegar.

SERVE THE FRITTERS WITH THIS SALSA 👆🏻.
