CHICKEN, CRANBERRY AND AVOCADO SALAD WRAP

These Chicken Cranberry Wraps – are a super lunch addition! It is perfect for any occasion and very easy to make – delicious and satisfying! They pack a huge flavor punch.

Of course like all other children mine don’t like all vegetables too. I try some tricks and try to make many interesting combinations with wraps, dressings, seasons, mayonnaise and so this way my kids enjoy them too. For the chicken, you can use rotisserie chicken, leftover chicken, fresh grilled chicken or any type of cooked chicken you have on hand and try lots of combinations.

Something that is very interesting with this recipe is all these beautiful colors which look really good rolled in wraps. Easy and quick preparing is one reason more to make these wraps, plus it is very practical because you serve it in small sizes which are very good for children.

The flavors are incredible, but mild enough they are loved by kids and adults alike.

Sometimes, I change things up a bit, though, like I’ll use sliced green olives or jalapeños , or skip the green olives and jalapeños altogether and add a few pieces of chopped red apples and a little bit of sharp cheddar cheese to the deal, to complement the cranberry. Sometimes, I’ll add a few tablespoons of finely chopped celery, for a bit of extra crunch.

When using chicken, I love to swap the raisins for dried cranberries, or chopped dates. Walnuts are left out to make way for pecans… And sometimes, I’ll do spinach instead of leafy greens.

Essentially, though, it’s pretty much always the same…a delicious wrap 😍

I’d forgotten just how awesome wrap sandwiches really are and just fell in love with them all over again. Not only do they come together in mere minutes, but they make for an awesome meal to take with you when you’re on the go. Very filling, very satisfying, and don’t need much of anything on the side: they’re a fairly complete meal in themselves.

INGREDEINTS:

2 cups cooked, shredded chicken

½ cup dried cranberries

1 avocado diced

1/2 cup mayonnaise

1/4 cup diced feta cheese

Salt, optional

White pepper, optional

1/4 cup spring onions

4 large tortillas or wraps….I used whole wheat.

INSTRUCTIONS

In a large bowl combine chicken with all the dry ingredients

Stir to combine

Add mayonnaise, salt, white pepper and mix well

Place tortilla on a plate

Layer with a spoonful of chicken mixture, Roll wrap, cut and enjoy!!!
