Ask anyone I know whether I like coffee, and they’ll probably laugh out loud and tell you I don’t “like” coffee, I “LOVE” it.

But, to tell you the truth, I was never a coffee drinker until I got married and it was introduced by my dear sister in law. And to be honest what I have is not serious coffee, I mean a latte or a cappuccino is a joke to espresso shot junkies. But in my defense I did start with frappachinos loaded with extra shots of caramel, to the point I felt like I was in a sugar coma 🤢

And now I have my coffee with an intensity upto hmmm 6 and no added sugar or flavours!!👏🏻 So there’s some progress 😎.

These Caramel Macchiato Overnight Dessert Oats consist of a sweet, coffee-infused oatmeal base and the most perfect topping in the world: coffee creamer + caramel!

These overnight oats take just a few minutes to prepare and BAM! Your breakfast is all ready for you in the morning. All you do is stir, cover, refrigerate overnight, and nom nom nom in the morning!

I’ve also tried this recipe using ground flaxseeds instead of chia seeds. It tastes just as good, you just gotta add an extra tablespoon of flax to get the same thickness as the chia seeds.

If you’re on the lookout for a new breakfast recipe that tastes BOMB and will keep you full all morning, you’ve sure found it! It’s hard to espresso how much I truly love these Caramel Macchiato Overnight Oats.

INGREDIENTS:

OATMEAL:

2 cups Quick Cooking Oats

3 tbs Chia Seeds (or ¼ cup Ground Flaxseeds)

12 single serving packets Natural Sweetener (I used stevia)….. Sugar Free and Zero Calories. Stevia Helps control calorie intake and maintain blood sugar level. Helps maintain body weight and thus works to prevent diabetes. Stevia is a natural sweetener made from the Stevia leaf.

¼ tsp Salt

1⅓ cups Unsweetened Vanilla Almond Milk

1⅓ cups Brewed Coffee (or Espresso, for a real caffeine kick!)

2 tsp Vanilla Extract

“FOAM” LAYER:

Coffee Creamer

CARAMEL OPTIONS:

Homemade Caramel Sauce

Store bought ( I have once used from marks and Spencer food hall, not bad)

DIRECTIONS:

In a large bowl, stir together the oats, chia seeds, sweetener and salt.

Stir in the almond milk, coffee, and vanilla extract. Cover and refrigerate overnight.

In the morning, drizzle on the creamer and caramel, to taste. Enjoy!

NOTES:

Yogurt (dairy yogurt, soy yogurt, coconut yogurt, etc.) or all natural whipped cream/coconut cream can also be used in the “foam” layer!
