BARBECUE CHICKEN AND JALAPENO FLATBREAD

This barbecue Chicken and Jalapeno flatbread is the perfect example of cooking with ingredients influencing just about everything from my kitchen. A super easy and delicious recipe with no special pizza gear needed.

A really, really, ridiculously yummy who-needs-a-pizzaria lunch. Or dinner. Or a tasty snack for two if you have an particularly peckish significant other hovering over your shoulder. You know what? You could make this for breakfast and nobody would judge you.

Switch Up Pizza Night With This Homemade BBQ Chicken flatbread Recipe! With Barbecue Sauce, Mozzarella Cheese, Chicken, jalapeño, And basil, This flatbread Will Be A New Family Favorite. Best Of All, It’s Made In Less Than 20 Minutes!

To make this Recipe as easy as possible, you use store bought pitas or Khubz (available in all supermarket in their bakery section) , as well as rotisserie chicken. It saves so much time not having to mix dough or cook chicken. That way, it only takes about 20 minutes to throw this flatbread together!

My approach isn’t very fancy, doesn’t require much time, effort, or ingredients…it’s more of a true ode to pizza, because the Khubz( AN ARABIC PITA OF FALTBREASD) itself is the star of the event.

Take, for instance, this flatbread. Appetizer extraordinaire! Completely informal yet healthful, and satisfying.. plus fiercely customizable. The way I see it, this is the perfect go-to for an afternoon snack or pre-dinner appy to tide you over before you make dinner.

And it happens to be the ultimate reflection of my appetizer philosophy…a little messy, a lot of flavor, strong potential to become actual dinner.

I smeared Spinneys pizza sauce on the flatbread, then topped it will all sorts of goodies. The only thing that could make this flatbread better is LOADING the thing in more CHEESE. I also think Basil Pesto would work like a dream in as the base sauce.

Another major win? You can really approach this flatbread however you’d like. It doesn’t have to be a formal recipe. You can top with any fresh seasonal veggies, cheese, nuts and seeds you happen to have in your pantry. Go Greek by doing a cucumber, kalamata olive, tomato situation if you’re into themes.

INGREDIENTS:

6 pita/khubz flatbread

1 Jar of SPINNEYS pizza sauce

1 1/2 cup shredded chicken, rotisserie chicken works great

1/4 cup barbecue sauce

2 capsicum (I used orange and yellow)

1/4 cup jalapeño

Basil to garnish

1-2 cup Mozzarella cheese

INSTRUCTIONS:

1. Begin by shredding your rotisserie chicken and tossing it in the barbecue sauce.

2. Next sear the pizza sauce on the flatbread as little or as much as you desire.

3. Now add cheese first then the barbecue chicken followed by the veggies to your flatbread. Sprinkle more cheese on top and bake for 5-7 mins, depending on the thickness of your khubuz.

4. Bake the flatbread until cheese is melted and khubuz is golden brown.

5. Garnish with some fresh basil.

6. Drizzle some truffle oil IF YOU HAVE, and ENJOY!
