AVO-LANCHE
So I made this for my Mil the other day as she injured herself and I wanted to cheer her up. Now she LOVES avocado 🥑, surprise surprise 😳😜.
Obviously I had some in the fridge. Like my friend jokes, “you probably have a tree of it at home, seeing how much you go through them “🤣. Anyway, I thought to my self 💭 hmm, what should I make for her with avocado that’s quick. So I randomly came up with this with the available ingredients in my fridge. Now, visually it looks great. Taste wise, I will have to take my Mil words for it, “ Amna beta it was tooooo good, really enjoyed it, khush rahou” phewwww الحمدلله ;) Now the fun part. I asked you guys to help me come up with a name for this, and you all gave some wonderful suggestions. I then took a poll between 2 names I loved the most from the suggested names, AVO-LANCHE AND BRUSCADO.
AVO-LANCHE was a winner with 64% votes.
Healthy avo-lanche is super easy to make and makes the perfect addition to any breakfast or even a snack!
Avo-lanche has become my new favorite breakfast/snack. It’s healthy, simple, and delicious and best of all, it’s super easy to make and ready in under 5 minutes. In fact, this recipe is so simple we can hardly call it a recipe, but I had to share it with you because of how good it is!
This recipe is for simple avocado toast but the possibilities are endless. Sometimes i like to zest up with beans, jalapeno, spinach, salmon, or pretty much anything else!
To begin, simply toast your bread; You can use any kind of toast or sliced bread you have but I like to use white or whole grain. Next, mash an avocado in a small bowl with a fork, leave some chunky pieces as it gives a nice texture.
**If you’re having it for breakfast go ahead and top the avocado with an egg cooked any way you like. My favorite is a sunny side up but poached, scrambled or even hard-boiled also works well**
Ingredients:
- 1 avocado
- 1/2 teaspoon red pepper flakes optional
- salt & pepper to taste
- 1 slices whole grain bread or bread of choice
- Hnadful rocket or arugula leaves
- 3-4 cherry tomatoes cut in quarters
- Diced feta cheese
- 1 tsp balsamic vinegar
Instructions
Toast a slice of white or whole grain in a toaster until slightly golden.
In a small bowl combine and mash the avocado, salt + pepper to taste.
Then on top of the arugula, add the avocado mix roughly to give some height.. For the added drama, I cut the toasted bread with a round cookie cutter.
Garnish with the cherry tomatoes, feta and some chilli flakes. Lastly drizzle the balsamic vinegar for the perfect tang.
